I want to use two connections –

CAN Analyzer

— and

OBDLINK

, each with its own XML file. Can RealDash read

both connections

?

You can. I’m using an OBD2 reader and a separate OBDLINK on a Y cable with the OBDLINK set to CAN XML. Pretty sure you can do it.
