I cannot read the FIAT sensors on RealDash

In your program, select only one sensor to display, let it be the temperature.
then your device will send a code to the bus.
it will consist of 8 bytes maximum
in kanshin it will look like this:

the answer will look something like this:

3. turn the Arduino on and see the packages being request and response

This is not announced yet, but in next release of RealDash you can use OBDLink adapters (http://obdlink.com) as direct CAN adapters too, so if you are considering buying an CAN adapter, OBDLink MX Bluetooth would be an good option.
