The color slider position can be shared via Data Multicast, so I see no reason why it could not be shared over CAN.
Do you mean the position of the sensor from 0 - to 100, if I understand correctly?
I mean the specific index of the selected color, like FF 00 00 FF, or like 255 00 00 255.
This way I could send the desired color to the external device.

No, but you can send the color slider position as of 0.0 to 1.0
